Banana Bread Makes Me Happy

135I was cooking supper and I kept smelling bananas. I had forgetten (I know crazy right…produce costs to much to forget) that I bought them last week. They were needless to say…RIPE! Scary Ripe! Back to the money factor…I could not throw the bananas away. I had to do something with them. I started smiling at the thought of banana pudding until I realized I didn’t have a nilla wafer in the pantry. Banana Bread IT IS!!! That will do just fine. I wasn’t planning on sharing a recipe in my second post but this one is just too easy and yummy to keep under wraps.

Simply Banana Bread

Preheat oven to 350 degrees

3 bananas smashed
1/3 cup butter melted
3/4 cup sugar or sugar substitute
1 egg beaten (always have eggs at room temp when baking)
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/4 cup AP Flour

Mix smashed bananas and butter Add sugar, egg, and vanilla Mix well (I love this batter because you can mix with a wooden spoon) Sprinkle baking soda and salt over mixture Add flour and mix

Add batter to a buttered loaf pan and bake for 50 minutes

This is a quick delicious bread that is great for any occasion and even better for breakfast with a little apple butter

  1. Yummy! I love banana bread, and as I’m terrible for letting bananas ‘go over’ I end up making quite a lot of it in the winter!
