ckn 002I had 4 chicken breasts on the bone that I boiled to make chicken broth yesterday. After filling my mason jars with the broth I cleaned the four chicken breasts and began to ponder what I would do with the chicken, after the pups got their share of course. I chunked the chicken and put it in the fridge for safe keeping. Tonight I made my chicken pot pie using actual measuring instruments so that I could share the recipe

1/4 cup butter
1/4 cup flour
4 cups chicken broth
2 cups milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon nutmeg
1 teaspoon hot sauce
2 oz cream cheese
2 cups chunk chicken
1/2 medium onion
1 medium potatoe
3 cups frozen vegetables ( I use the carrots, corn, peas, and green bean combination)

Dice potato and boil in a small sauce pan 8-10 minutes until crisp tender. In a larger sauce pan melt butter. Add flour to make a rue. Stir for a few minutes to cook flour on medium heat so that it doesn’t get dark. Add chicken broth, milk and spices stirring until it comes to boil and thickens. Add hot sauce and cream cheese and reduce heat to medium low heat. Simmer for a 15 minutes. Add potatoes, onions, and frozen veggies.

Pour filling into backing dish or 2 pie plates. Top with frozen pie crust or bisquick drop biscuits make a great topping too. Brush top with melted butter or egg wash. Bake for 45 minutes or until crust is golden.

    • I hope that you enjoy it as much as we do. It has become a staple meal around here. They freeze really well too. Nothing like preparing two meals at one time. Gives us more time to write!
