Spring is almost here and in many ways I am so ready. Part of me, is sad to say goodbye to winter. Nights of warm chilis and chowders are about to be a memory. I find that my menus change with the seasons, and after being outside in the heat all day I would much rather have a salad or light dinner. It has been 73 degrees here today, spring is right around the corner. Tonight we will have our farewell to winter Chicken Chowder. This recipe is so good and so easy. Leftovers are even better the next day. Hubby and I will sit and enjoy our chowder tonight realizing that this recipe will be shelved away til fall.
Love these one pot meals! I always have cooked chicken in the freezer so this is a go to recipe for me ALL winter. If you don’t just saute 2-3 chicken breasts.
1 stick butter
1 cup peeled and diced carrots
1/2 cup onion
1 cup celery
1 cup diced potatoes
1/2 cup frozen corn kernels
1/3 cup flour
4 cups chicken stock
3 cups cooked shredded or diced chicken
1 cup heavy cream
Melt butter add veggies let saute until tender crisp Add flour and cook for approx 4 minutes to let raw flour taste cook out
Add stock and chicken bring to a boil then reduce heat and let simmer for 30 minutes Add heavy cream and stir Salt and pepper to taste. I add 2 tablespoons of flat leaf parsley at the end if I have it on hand.
I usually (ok always) serve with CORNBREAD! Glass of sweet tea and VOILA…
